Mr. Coxon’s Chocolate Pie
Ingredients:

packages of soft silken tofu (I use the kind that comes in a box and does not
need refrigeration—firmer tofus are absolutely not
appropriate!)
1
cup of dark chocolate chips (I use the bulk chips from Eats Natural Grocery in
Blacksburg)
1
Tbsp Vanilla
1
Tbsp Sugar
1
ready-made graham cracker piecrust
Instructions:
1. Over medium-low heat, melt chocolate in a small pot while stirring almost constantly—do not allow chocolate to burn!
2. In a blender, combine tofu, sugar, and vanilla.
3. Add melted chocolate to the blender and blend thoroughly.
4. Pour into piecrust, cover, and refrigerate for at least an hour, but preferably overnight or longer, before serving.
5. No one will ever suspect that tofu is involved!
