Mr. Coxon’s Chocolate Chip Cookies

 

Ingredients:

1 cup (2 sticks) of margarine (I put mine in a small bowl and melt them for

30 seconds in the microwave) (I use a type with no trans fats)

 

1.5 cups of sugar (I use organic unrefined crystals)

 

2.5 cups of flour (I use organic unbleached white flour)

 

2 cups of chocolate chips (I strongly prefer the dark chocolate chips sold in

bulk at Eats Natural Grocery in Blacksburg)

 

½ tsp baking soda

 

2 tsp vanilla extract

 

2 eggs (I use Ener-G Egg replacer, available at Kroger and natural food

stores—the best part is you can safely eat the raw dough!)

 

Instructions:

1.     Preheat oven to 350-375F

2.     Beat melty margarine and sugar with an electric mixer

3.     Beat in baking soda, vanilla, and eggs/replacers

4.     Beat in flour

5.     Stir in chocolate chips with a wooden spoon

6.     Spoon out onto ungreased baking sheets

7.     Place in oven

8.     At 8 minutes, begin checking every minute for a light brownness to begin around the edges of the cookies—when this appears, they are done

9.     Allow cookies to cool on wire racks

10.  Enjoy!
